Cream of leeks . Another good idea to eat healthy. This recipe is going to be something different but, delicious. Previously, before cooking, we will make a small stir-fry with the vegetable, enhancing all its flavors. In this case we have not used many ingredients, except those that will give more flavor and body to the dish and that will make it more special. Let’s see how to prepare this leek cream in a few steps:


  • 4 leeks
  • 1 onion
  • 1 potato
  • 500ml of vegetable or chicken broth
  • 1 nut of butter
  • 150ml of cream for cooking
  • salt and pepper
  • olive oil


1.- In a large pot, put a jet of oil and heat it over medium heat. When hot, add the leeks and onion, all chopped, and a pinch of salt and pepper. Let it cook for 5 minutes, stirring frequently.

2.- Having done this, we also introduce the potato cut i

nto small cubes. Mix all the ingredients, stirring for a couple of minutes. Then add the broth, ensuring that the vegetables are well covered, but without passing or lose consistency. We let everything cook for 30 minutes, keeping the heat medium and stirring occasionally.

3.- After that time, we remove it from the heat and pass the contents to a beater glass. We beat everything with an electric mixer until everything is crushed and the texture is quite homogeneous. If you wish, you can use a pass-through, so that there is no stumbling block but in reality, it is not necessary. We correct salt and pepper and return it to the pot.

4.- Now, we will heat it again over low heat. Add the cream and butter and stir until it completely melts. If the consistency of your leek cream is too dense (like a puree) you can add a little more broth. And if on the contrary it is too liquid (like a soup) you can add more butter or cream.

As you can see, preparing a cream of leeks is not difficult or expensive at all, and the result is worth it. When you go to serve, you can decorate each with a little black pepper or chopped parsley, always to taste.
