The shredded or shredded beef is a great filling for your arepas, tacos, pizzas and almost any thing you can think of. It consists of a very tender meat, seasoned with other vegetables and spices. It takes some processing time – especially for cooking meat – but it doesn’t take much effort. Its realization is easy and very resultona. To make a roast beef, the best parts are the fatty parts of the animal, such as the skirt, the stride or the hip.


  • 1kg of fat beef
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 2 carrots
  • 4 cloves of garlic
  • 200g crushed tomato
  • 1 glass of white wine
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Chopped cilantro
  • salt and pepper
  • Oil


1.- Cook the meat. The longest part of the recipe. To do this, we put in a pot enough water to cover the veal. We add a pinch of salt and bring to a boil and then, we introduce the veal’s own meat. Cover and let simmer 3 hours. You can speed up this cooking time if you do it in a pressure cooker. In this case, one hour of cooking. The meat will be very tender.

2.- When it is done, we make the stir-fry that will accompany our meatloaf In a pan we put a splash of oil to heat over low heat. Add the chopped garlic cloves and let them cook for a couple of minutes. Do not take color.

3.- Add the carrot cut into cubes. Also the onion and peppers well chopped. We season and mix with a wooden spoon, while letting it cook for about 15 minutes.

4.- After this time, add the crushed tomato and let it cook for another 5 minutes.

5.- Now, we add the white wine. We raise the power of the fire and wait another minute for the alcohol to evaporate.

6.- It is the turn of adding spices: Thyme, rosemary, bay leaf and cumin. The Coriander we leave for the end. Now, we add a ladle of the broth where we have cooked the veal. It will enhance all the flavors. Let cook a few minutes

7.- Meanwhile, we desmecha the meat. It will be so tender that with two forks, we can do it easily. We are separating pieces of meat, until it is “crumbled.”


8.- Having done this, we add it to the rest of the preparation, mix and let it cook a little more. Until the broth that we had added before evaporates and there is an exchange of flavors.

9.- When our shredded meat is practically done, we add the chopped cilantro, mix a little more and it is ready to be used!
