OAK ROASTED VEGETABLES recipe

Traditionally, kebabs and skewers have been made with meat. In their day, we prepared them with chicken and they were very successful. On this occasion, we are going to make baked skewers of vegetables . Much healthier and with hardly any calories . It is a very tasty and easy to make snack . To give it even more flavor, before roasting, we will put a sauce, made with honey and mustard .

This dressing is something intense, because it contains garlic, but it will give a delicious touch to roasted vegetables . If you fancy an easy-to-make and healthy snack, try to make these baked vegetable skewers at home.

INGREDIENTS OF VEGETABLE SKEWERS FOR 4 PEOPLE:

  • 200g whole mushrooms
  • 1 zucchini
  • 2 scallions
  • 200g cherry tomatoes
  • 1 lemon
  • 2 cloves of garlic
  • 1 handful of parsley
  • 2 tablespoons honey
  • 2 tablespoons mustard
  • salt and pepper
  • olive oil
  • skewer sticks

RECIPE:

Time needed:  30 minutes.

Now we are going to see how these delicious vegetable skewers are prepared, baked and in a few minutes.

  1. First, we prepare the dressing for our skewers.

In a mortar, put the chopped garlic and parsley. We crush them until they come apart completely. Then, we add the oil, honey and mustard. We mix everything until we get a homogeneous sauce and reserve it for later.

  1. Cut the vegetables and skewer them on skewers for skewers.

Then, cut the scallions and zucchini into medium pieces, the size of a bite. Try that the scallion does not fall apart in layers, so that it has more bite. Then, we are pricking the different vegetables until completing the skewers.

  1. Finally, we prepare the skewers with the honey and mustard sauce, and roast them in the oven.

This done, we painted the skewers with the honey and mustard sauce that we had reserved. We place them on a rack and put them in the oven, previously heated to 180ºC. We let them cook here for about 20 minutes, until they brown. And … Ready to serve!

In this simple way we have prepared some skewers of baked vegetables . Being made with vegetables, this appetizer is much healthier than the traditional meat we all know. Try to make them at home, you will surprise your guests!
