RICE CAKE WITH CHICKEN MEAT AND CHEESE easy recipe

RICE AND PICKED MEAT CAKE
INGREDIENTS FOR 4 PEOPLE:
- 1kg of minced beef and pork
- 400g round rice
- 2 leeks
- 2 carrots
- 1 onion
- 4 cloves of garlic
- 200g of cured or semi-cured cheese
- 1l chicken stock
- 1 teaspoon sweet paprika
- 1/2 teaspoon cumin
- 1 bay leaf
- salt and pepper
- olive oil

- We cook the vegetables that will accompany the rice
In a nonstick casserole over medium heat, put a splash of oil. When it is hot, we add a carrot, a leek and a clove of garlic, all well chopped. We season it and cook it for about 15 minutes, stirring frequently.
- Add the rice, sauté it and cook it
After this time, we add the rice to the casserole. We salpimentamos, we throw the paprika, the bay leaf and we mix it with the vegetables during a couple of minutes so that the rice absorbs all the flavors. Then, add the chicken broth, stir a little to mix it with the rest of the ingredients and let it cook for about 15 minutes. When the rice has absorbed the broth, we remove it from the heat.

In a large skillet over medium heat, put another splash of oil and let it warm. When it is hot, add the other leek, the carrot, the onion and the remaining garlic cloves, all well chopped. We season it and cook it for 10 minutes, stirring frequently.

After this time, add the minced meat, cumin and a little more salt and pepper. With a spoon, we shred the meat and mix it well with the rest of the ingredients. Let it cook for about 10 minutes, stirring occasionally, until the meat is fully cooked.

Then, in a mold, we put half the rice and spread it across the surface. Add some grated cheese and put the minced meat on top. Then, we put a capita of grated cheese and cover everything with the rest of the rice. We compact it well and throw the rest of grated cheese on top.
